I spent a large part of the day cooking. In the morning I made all the dishes for O’s trip to the Upper Peninsula of Michigan. He is going to be there for five days and four nights so he asked for:
- Hainan Chicken Rice
- Stir fried Chinese egg noodles with vegetables
- Pot roast
- Chicken salad with grapes
- Tomatoe, olives, and feta cheese salad
I used the crockpot for the pot roast and that saved me at lease 6 hours to do something else. There is leftover chicken broth that I will make mì gà (chicken noodle soup with egg noodles) for the boys. And I will freeze the leftover pot roast for dinner in future time. The boys love to eat that with French baguettes. As for O, he is satisfied that he got most of his meals covered for the week, and also having the comfort of home cook meals while being away.
We also visited my brothers and Mom later in the afternoon. Such a nice weather today, with day time saving gives a bit more day light in the evening. There, I made đầu cá mú nấu canh chua (sour soup with grouper head) and tôm rim nước dừa (caramelized shrimps with coconut water). My mom also made fried bánh tét, the fried New Year rice cakes that was sinful and yet irresistible at the same time.
I love having our Sunday family dinner and catching up on the week while the kids play together.
