I am also taking advantage of O’s absence today by not cooking full-fledged three meals a day for the boys. For breakfast I made blueberry pancakes, left-over cheese lasagna for lunch, and dinner…well, I went with my version of comfort (and lazy!) food — a peasant meal.
I packed everything in a large bowl and fed the boys from there; just one bowl and we were done with dinner. I also let them watch a movie on Netflix, a once-in-awhile treat that we don’t have to sit at the dining table for a meal. O would never approve of this eating-while-watching-TV habit, but we broke the rules today. Just today!
Vietnamese egg omlette, crunchy cucumbers, blanched Asian green (yu choi), and just plain white steamed jasmine rice. I also drizzled on top of the rice some Maggie soy sauce and some sesame oil.
Fiber, carb and protein — all check!
