Day 25 — making dinner at 1 p.m.

I am not a super organized mom, but there are days I have to pack things in an itinerary to make sure that everyone is happy by the end of the day. Today was one of those days!

O requested Hainanese chicken for dinner with garlic chicken rice. These two dishes are related in one meal, but the rice depends on the broth from the chicken. The kids wanted to spend time at the wading pool, and also attend a kid’s music concert at the park. I had no choice but to start cooking dinner at 1p.m. before taking the boys out to the wading pool at 3 p.m., when the temperature was in mid 80s and warm. 

Once the boys get to the pool and play with water, it’s hard to get them out. They spent more than two hours splashing water until the temperature dropped and theirs lips became purple while shivering. But they had so much fun.

The Hainanese chicken and garlic rice turned out well, or maybe because they were all hungry from a day packed with activities and needed the extra calories. 

Tomorrow there is a crew coming over to install a few fan in our bathroom, that means the house will be occupied for a whole morning. I already planned to not cook and  filled the fridge up with pasta salad, marinade talapia and salmon ready for either pan fry to oven-bake, as well as beef phở broth.  We will have enough to last until Sunday for sure.
