We craved for beef phở during out two-week stay in Hawaii. There were a few times I tempted to venture out to a Vietnamese restaurant to have a bowl, but it didn’t happen. I was afraid of disappointment. Last Sunday I made a big pot while suffering from a massive migraine headache. We ate it for Sunday, Monday, and today.
It’s my third day of eating the same thing — phở — as main meals. I think Mr. O and the kids are done after day 2, and as thrifty as I am, I will probably scape the bottom of the pot until the last drain of broth.
The broth didn’t come out looking clear and clean, because I didn’t do a good job cleaning the bones. But oh well, it’s very flavorful and rich.
P.S. I woke up early today to make eggs for Mr. O before he left for work. It was early and cool so I decided to feed myself some good dose of endorphins by breaking the sweats and working out for an hour of cardio.
